On this day in 1903, it was reported that a new enterprise was waking to life in Echo, the booming little town 31 miles below Pendleton. "Here what promises to develop into one of the biggest establishments of the state is being started. "The derided idea of a jack rabbit cannery has actually materialized and the enterprise is now fairly under way. The American Hare Packing & Cold Storage Company has been organized to develop the industry."
